Got Wood?

Last week I decided to bottle the other 3 gallons of my robust porter. The porter had been sitting on oak chips for a good month and I felt it was time to bottle. To a very small proportion (4-5 bottles) of these oaked porter bottles I added a smidgen of Bulleit Bourbon...just for shits and giggles. What this means, for those of you willing to make the trek to the Two Thumbs Brewery, is that you may partake in the very limited Two Thumbs Bourbon Barrel Porter.

In other news, I'm scheming a revision to my current porter recipe to enhance the chocolate flavors. The result of the original batch, which is currently on tap, was slightly bitter and had a bit more coffee taste than I was anticipating. The bitterness came from the poor efficiency in the mashing process. Had I hit my planned original gravity of ~1.080, instead of 1.050, the high alpha hop addition would no doubt have been well balanced with the malts. In the next incarnation I'll only be mashing the specialty grains and will use malt extracts for the rest.
